Eats—More on the Nancy Silverton/Amy Pressman Burger Joint Coming to the Farmers Market

2009_08_26_grassburger_small Via Eating LA, we learn that Shindler’s Dish has some scoop on the burger spot Nancy Silverton (La Brea Bakery, Campanile, Mozza) and Amy Pressman (Pasadena’s Old Town Bakery former owner) will be opening at the Farmers Market.

Thus far, they’re calling it Market Burger. Pressman tells the blog: “It’s in the old Du-par’s Bakery. It’s a two-story building—a stand downstairs, sit-down upstairs. The upstairs will open up, so it’s sort of a crow’s nest. You’ll be able to look over the market, not just into it.”

As far as the burgers, it’s all about the delicate balance: “…we’re figuring out every aspect of the burger. The meat, the bun, the toppings, the cheese—there are lots of parts,” Pressman says. “It’s all about the proportions. The meat, the cheese, the bun, the crunchiness of the bun, the toppings—everything has to work together. Get one element out of whack, and it falls apart.” And the meat? “I’m extremely passionate about the possibilities of using grass-fed beef from Sonoma Direct. And Nancy has come up with a blend of Harris Ranch beef that’s fabulous.”
